*Nutty Cocktail Balls
1 pound
ground round
3 tablespoons
sour cream
2 teaspoons
diced onion
1/2 cup
chopped walnuts
1 clove
garlic, minced
2 teaspoons
seasoned salt
3 tablespoons
butter
Mix first
6 ingredients together thoroughly. Shape into 1-inch round balls.
Brown
in butter. Serve on toothpicks.
*Rhubarb Snack
1/2 cup
cottage cheese
2 tablespoons
rhubarb strawberry jelly <see below>
Mix together
*Rhubarb Strawberry Jelly
5 large
stalks rhubarb
1/2 cup
water
1 envelope
sugar free strawberry gelatin
1 cup
fresh strawberries, halved and sliced
Cut off
leaves and stem ends from rhubarb. Wash thoroughly. Dry well. If rhubarb
is young,
the skin
is tender and will not need to be peeled. If skin is tough, peel rhubarb.
Cut rhubarb
into 1/2-inch pieces. Place in large saucepan with water. Bring to boil.
Lower
heat and simmer, covered, for 15 minutes. Stir in gelatin and strawberries.
Pour into
jelly glasses and chill until set.
*Stuffed Eggs (Greek style)
24 greek
olives, pitted
6 hard
cooked eggs
2 tablespoons
soft butter
seasoned
salt
Puree pitted
olives in blender. Cut eggs in half lengthwise and mash yolks until fine.
Combine
olives, yolks, butter, and salt until smooth paste is formed.
Fill egg
whites with mixture.
*Stuffed Mushrooms
1/2 pound
large white mushrooms
4 tablespoons
butter
1/8 cup
chopped onion
1 tablespoons
chicken fat (or butter)
1/4 pound
chicken livers (1/2 cup)
3 tablespoons
cream cheese
salt and
pepper to taste
1 egg,
hard cooked and chopped
Remove
stems from mushrooms. Chop stems. Heat butter in skillet. Sauté
mushroom caps.
Remove
from pan and set aside. Sauté onion and mushroom stems in butter
until onion
is light
brown. Remove from pan. Add chicken fat to pan and brown chicken livers.
Cool
livers.
Chop them. Cream together cream cheese with liver, mushrooms, and onion.
Add
salt and
pepper. Stuff mixture into mushroom caps, garnish with chopped eggs and
serve.
*Sweet Cheese Snack
4 ounces
cream cheese, at room temperature
2 eggs,
separated
1 tablespoon
white sugar substitute
Preheat
oven to 350 degrees. Cream the cheese with egg yolks until smooth. Add
sugar substitute.
Beat egg
whites until stiff, but not dry. Fold cheese mixture into stiff whites.
Be careful not to
break
down egg whites. Grease <with cooking spray> cookie sheet. Drop mixture
by teaspoonfuls
onto cookie
sheet and bake in 350 degree oven for 10 minutes.
